Pignoletto Frizzante

Grapes: 100% Pignoletto
Production area: The hills surrounding Bologna and the Monte San Pietro microzone in particular.
Production Technique: After manual harvesting, the grapes are pressed and smashed and the liquid is separated from the remaining solid parts. Fermentation begins at 18/20° C and the wine is aged in the bottle for at least two months.
Alcohol Content: 12% Vol.
Tasting Notes: Pleasantly sparkling crystalline and light yellow with greenish reflections. A fresh, dry and soft wine with delicate flower scents and hints of apple, peach and yellow plum evolving over time. It has a light yet pleasantly almost-bitter aftertaste.
Serve With: Best served with typical appetizers from the Emilia-Romagna region, as well as white meat, fish, shellfish, raw fish, seafood pastas and young, soft cheeses. It goes well with the entire meal.
Serving Temperature: 7/9° C

Pignoletto Tranquillo

Grapes: 100% Pignoletto
Production area: The hills surrounding Bologna and the Monte San Pietro microzone in particular.
Production Technique: After manual harvesting, the grapes are pressed and smashed and the liquid is separated from the remaining solid parts. Fermentation begins at 18/20° C and the wine is aged in the bottle for at least two months.
Alcohol Content: 12% Vol.
Tasting Notes: A shining straw-colored wine with scents reminiscent of hawthorn, elderberry and fresh grass, along with traces of mellow fruit and sweet spice. The taste is striking for its firm bouquet and its long persistence.
Serve With: Excellent with pasta dishes featuring asparagus, mushrooms or truffles. It also goes well with white meat, fish and slightly aged cheeses. It is a classic pairing with tortellini in chicken broth and is generally a flexible wine for all situations.
Serving Temperature: 10/12° C

Chardonnay

Grapes: 100% Chardonnay

Alcohol Content: 12.5% Vol.
Tasting Notes: The wine features a straw-yellow color with greenish reflections and boasts a delicate, fruity bouquet reminiscent of Golden apples.
Serve With: Excellent as aperitif or served with soups, vegetables and pastas with light sauces.
Serving Temperature: 10/12° C

Chardonnay Frizzante

Grapes: 100% Chardonnay

Tasting Notes: The wine features a shining straw-yellow color with a persistent froth and a pleasant fruity taste.
Serve With: Excellent at the end of a meal or served with dessert

Merlot

Grapes: 100% Merlot
Production area: The hills surrounding Bologna and the Monte San Pietro microzone in particular.
Production Technique: After manual harvesting, the grapes are gently pressed and smashed and left to soak for 10/12 days in a steel tank where they are pumped over and pressed down at a temperature no greater than 26° C. After the racking process, maturation occurs in steel vinification tanks before the wine is aged for a minimum of three months in the bottle.
Alcohol Content: 13% Vol.
Tasting Notes: The wine features a typical ruby-red color with violet reflections and a fine, delicate aroma with a light hint of grass. It has a dry, full-bodied taste with a slight touch of heat.
Serve With: It is an excellent match with lasagna, cannelloni, tagliatelle with meat sauce or hearty soups. And it is unsurpassed when served with boiled, grilled or roasted white and red meats, as well as light wild game and mushrooms.
Serving Temperature: 16/18° C in wide-mouthed wine glasses

Cabernet Sauvignon

Grapes: 100% Cabernet Sauvignon
Production area: The hills surrounding Bologna and the Monte San Pietro microzone in particular.
Production Technique: After manual harvesting, the grapes are gently pressed and smashed and left to soak for 10/12 days in a steel tank where they are pumped over and pressed down at a temperature no greater than 26° C. After the racking process, maturation occurs in steel vinification tanks before the wine is aged for a minimum of three months in the bottle.
Alcohol Content: 13% Vol.
Tasting Notes: The wine features a typical ruby-red color. It strikes the tongue with a strong winey taste that evolves into an intense and bold grassy and spiced flavor. It is dry and hot with an elegant and firm bouquet and a sharp and balanced taste.
Serve With: To accompany the entire meal, it is perfect when served with wild game, like hare, wild boar and venison. Also an excellent match with red meat, pork rolls and braised meats as well as with pasta dishes with heavy sauces and aged cheeses.
Serving Temperature: 16/18° C in wide-mouthed wine glasses and the bottle must be opened at least one hour before serving

Spumante
